On a specialized diet regime due to past problems.  None since this diet was adopted.  I am restricted to coconut milk ice cream to keep stomach issues at bay.  Sometimes hard to find, but good when I get some.  Have no stomach cramps or issues since I started about 8 years ago.  I feel empowered taking care of myself and sticking with it this long.  I also feel healthy and have energy.  I like the vanilla ice cream (or chocolate chip) that I can eat.  I buy it occasionally, since it only takes 2 or 3 days to finish the pint I buy.  Cool, yummy, refreshing and keeping me aware and paying attention to myself and my health.

Hi, @cherilynhack interesting you have no problems with coconut milk ice cream, as it’s a known irritant for some people causing more issues, especially for sensitive stomachs and IBS. It’s also got a high fat content to it.  Glad it’s working for you. 👍

That’s great!    @MicheleB226335 I love freezing them on a sheet pan, bagging them, and storing in a freezer bag for a great pop-in-the-mouth snack. Incredibly good for us too.
