Week 3: Healthy Eating Contest: D is for Delicious!

‘D’ IS FOR DELICIOUS: Include one vitamin D-rich food in your diet every day this week (June 15-21, 2020).

 

The challenges of the last few months have dramatically changed how we shop for, prepare and consume food. But now is not the time to back off the good nutritional values you have learned and been practicing. Help support your immune system by adding vitamin D-rich foods such as salmon, herring, sardines, tuna, egg yolks and mushrooms to your diet every day.

Spinach is great for Vit D, and I add it to almost everything.

This challenge is making me really work! I'm a vegan, I don't eat eggs or dairy, and there aren't many plant sources of Vitamin D (lichen...mm). So, I do take a daily D3 supplement. And I love to sit in the sun!

I did some research to find options and learned that some mushrooms contain D; other sources are fortified foods like soymilk, tofu, orange juice, cereals. Luckily I had some shi take mushrooms on hand, which I sauteed to add to dinner, along with tofu (fortified with D) and tomatoes, with wild rice and kale. (The rice was not really green, that's my camera!)

In my young, active, thin years, I used to eat ice cream most nights of the week! But now it is a treat and I get most of my Vit D from Greek yogurt and 2 pct milk, which I could drink all day long, but it TOO MUCH health, fat, calorie and price-wise

One of our favorite summer meals is a Cobb Salad which has healthy ingredients especially Vitamin D rich foods like egg yolks and mushrooms.

I love an egg with avocado.  Just crack an egg in the avocado half and bake 10 minutes  400 degrees in a toaster oven. yum.

cooking avocado destroys ALL the Omega 3 and Vitamin E. Maybe make a poached or hard boiled egg and AFTER the egg is cooked THEN put it in the center of a RAW avocado? Not at all trying to be Miss Smarty Pants but I have a degree in Community Nutrition.

Week 3

Salmon is my go to meal. Today it was served on a bed of sauted onions on a basil tomato bread. The side salad had added chia and flax meal.

I love eggs with fresh dill low fat shredded cheddar cheese. I salute garlic and mushrooms first. Then scramble eggs add a smidge low fat milk chopped tomato, onion, and green pepper and the gross chop dill. It holds me for like 6 hours.

On their last evening here, my son, grandson and I had ham steaks for dinner with a sauce made with orange juice. We had vitamin-D fortified yogurt with fruit and granola for dessert.

Great idea to incorporate such a wide variety of vegetables in your recipie. I am not vegan and not a vegetarian but 85% of my plate is always PLANT BASED nutrition. I consider animal food to be a condiment to season and flavor my food. I am going to try your recipie because it is the veggies that are the "star" and the bit of cheese and smidgen of milk are just the "co-star" not the main ingredient.
