I love onions! Always have some sort in my salads - red or Vidalia or scallions, sometimes a mix - and when I have time I sauté onions and mushrooms with herbs for a hearty omelet. I usually use vegan cheese shreds because of my cow milk allergy, but goat cheese crumbles or feta work also.

That is a breakfast that helps me power through the day! 😁😋

@AARPMaggie Good info! I wear my swim goggles when I cut them, so my eyes aren't affected.  Looks ridiculous, but totally worth it.

I deep fry the entire onion first, then cut it up.  Guess what?  No tears!  😭
