Onions, a staple in many cultures, are a nutrition powerhouse. This blog reports on a Harvard study that suggests that onions may help protect our brains as we age. They’re loaded with vitamin C, flavonoids, potassium and B vitamins. And it’s those B vitamins that may be beneficial for your brain. Visit AARP® Staying Sharp® for more brain health information.
I love onions! Always have some sort in my salads - red or Vidalia or scallions, sometimes a mix - and when I have time I sauté onions and mushrooms with herbs for a hearty omelet. I usually use vegan cheese shreds because of my cow milk allergy, but goat cheese crumbles or feta work also.
That is a breakfast that helps me power through the day! 😁😋
@AARPMaggie Good info! I wear my swim goggles when I cut them, so my eyes aren't affected. Looks ridiculous, but totally worth it.
