You can use the gift cards for purchases made before boarding by using them as the payment method.  If you are wanting to add them to your onboard account to pay for purchases during the cruise you will have to wait until you are onboard.  Then you can apply them to your account either at the kiosk or by going to Guest Services.

See Kellythebelly's reply below.  It trips me up everything, but go to Rewards then Redeem then Memer Only and you should see it.   You do have to be logged in.  Good luck and enjoy!
