Would like to get some ideas for good vegetarian meals that are simple, healthful, tasty and soy-free. Could really use some input, to get out of my meal planning rut. Thanks for any help, it's really appreciated. Christine
And Google shakshuska - there are tons of ways to make it.
But I like to combine this from the New York Times Cooking website and this one (especially the harissa) from Blue Apron. The thing about Shakshuska is that you can pretty much use whatever you have around the house so long as you have a can or two of tomatoes and some eggs.
It should have peppers and onions, but once you get the feel for it - it's like soup - you can add whatever you want or leave out whatever you don't have.
