Favorite Feel-Good Recipe

This easy-to-make "Swedish pancake" is one of my all-time favorites! The recipe was shared years ago by a long-time family friend and this always makes me think of her. What's the one favorite dish or meal that evokes good memories for you?

1 c milk
2/3 c flour
2 T sugar
1/2 t salt
2 eggs
1/2 t lemon zest
1/2 t cardamom
1/4 c butter

Melt butter in large, glass pie plate while oven preheats. Blend everything, pour into pie plate w/ melted butter. Bake @ 400, 30 min. Serve with mix berries, syrup or confectioners sugar. (Have had luck doubling this recipe and using a 9x12” glass pan.)
